Pour l\u2019\u00e9levage, il se traduit par <strong>trois enjeux<\/strong>\u00a0: <\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>contribuer \u00e0 nourrir une population mondiale <\/strong>qui augmente, <\/li><li><strong>mieux utiliser les ressources<\/strong>,<\/li><li><strong>r\u00e9pondre aux attentes soci\u00e9tale<\/strong>s en termes d\u2019environnement, de bien-\u00eatre animal ou encore de comp\u00e9tition alimentaire entre l\u2019homme et l\u2019animal.<\/li><\/ul>\n\n\n\n<p>En Europe, un programme de trois ans a \u00e9t\u00e9 lanc\u00e9 pour travailler sur la place des produits laitiers dans ces syst\u00e8mes alimentaires durables.<strong> La fili\u00e8re lait fran\u00e7aise l\u2019a traduit au travers de sa d\u00e9marche France Terre<\/strong>. Le postulat de base est que les productions animales seront socialement acceptables si\u00a0:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>R\u00e9mun\u00e9ratrices pour l\u2019\u00e9leveur<\/li><li>Respectueuses du bien-\u00eatre animal<\/li><li>Vertueuses sur le plan environnemental<\/li><li>Peu en comp\u00e9tition avec l\u2019alimentation humaine<\/li><li>L\u00e9gitimes dans l\u2019occupation et l\u2019entretien du territoire<\/li><\/ul>\n\n\n\n<p>Pour r\u00e9pondre au quatri\u00e8me point, ils ont travaill\u00e9 sur la<strong> notion d\u2019efficience nette de conversion des aliments par les animaux d\u2019\u00e9levage<\/strong>. Afin de d\u00e9terminer s\u2019ils sont consommateurs ou producteurs de prot\u00e9ines. Par efficience, on entend alors le rapport entre les r\u00e9sultats et les moyens mis en \u0153uvre.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">L&rsquo;efficient prot\u00e9ique brute des prot\u00e9ines laiti\u00e8res<\/h3>\n\n\n\n<p>Si on raisonne en efficience prot\u00e9ique brute. <strong>L&rsquo;efficience prot\u00e9ique brute c&rsquo;est le ratio : Prot\u00e9ines des produits de l\u2019\u00e9levage consommables par l\u2019homme \/ Prot\u00e9ines v\u00e9g\u00e9tales consomm\u00e9es par les animaux.<\/strong> Pour produire 1 kg de prot\u00e9ines animales, les vaches laiti\u00e8res consomment 5 kg de prot\u00e9ines v\u00e9g\u00e9tales. Pour les ch\u00e8vres laiti\u00e8res, il s&rsquo;agit de 6,5 kg. Et pour brebis laiti\u00e8res la consommation monte \u00e0 7,8 kg. Les syst\u00e8mes d\u2019\u00e9levage laitiers de petits ruminants sont, par contre, consommateurs nets d&rsquo;\u00e9nergie. Or, sur les 50 %, 35 % sont sur des terres non arables. Cela signifie donc que, seulement 29 % de la SAU actuellement utilis\u00e9e pour l\u2019alimentation animale peut \u00eatre disponible pour produire directement des prot\u00e9ines pour l&rsquo;alimentation humaine.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">M\u00e9thodologie d&rsquo;\u00e9valuation de la comp\u00e9tition d&rsquo;utilisation des terres agricoles<\/h3>\n\n\n\n<p>Une <strong>m\u00e9thodologie pour \u00e9valuer la comp\u00e9tition d\u2019utilisation des terres<\/strong> pour produire des denr\u00e9es alimentaires \u00e0 l\u2019\u00e9chelle du syst\u00e8me de production a \u00e9t\u00e9 mise au point dans le cadre du projet ERADAL. Elle comprend alors <strong>quatre \u00e9tapes<\/strong>\u00a0:<\/p>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\"><li><strong>D\u00e9terminer la surface n\u00e9cessaire<\/strong> pour nourrir le troupeau (surface de l\u2019exploitation + aliments achet\u00e9s<\/li><li>En rep\u00e9rer la part de <strong>surface arables<\/strong><\/li><li>Proposer des <strong>rotations adapt\u00e9es<\/strong> \u00e0 une alimentation 100% v\u00e9g\u00e9tale avec une estimation des rendements<\/li><li><strong>Calculer le ration Quantit\u00e9 de prot\u00e9ines v\u00e9g\u00e9tales<\/strong> potentiellement produites \/ Quantit\u00e9 de prot\u00e9ines animales actuellement produites.<\/li><\/ol>\n\n\n\n<p>Des r\u00e9sultats pr\u00e9liminaires montrent<strong> une forte variabilit\u00e9 en fonction<\/strong> :<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>de la<strong> part de terres arables utilis\u00e9es<\/strong> pour nourrir les animaux<\/li><li>des <strong>hypoth\u00e8ses de rotations<\/strong><\/li><li>des <strong>rendements v\u00e9g\u00e9taux estim\u00e9s<\/strong>, notamment sur le long terme<\/li><\/ul>\n\n\n\n<p>Toutefois, avec cette approche, <strong>de nombreuses questions persistent<\/strong> :<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Quel impact de l\u2019arr\u00eat de toute fertilisation organique (car plus d\u2019\u00e9levage) sur les rendements et la qualit\u00e9 des sols\u00a0?<\/li><li>Quelle(s) rotation(s) pour avoir un r\u00e9gime 100% v\u00e9g\u00e9tal peut-on mettre en place\u00a0? Cela pose donc la question de la faisabilit\u00e9 agronomique, aux niveaux de rendement et r\u00e9gularit\u00e9. De part l&rsquo;introduction massive des prot\u00e9agineux dans les syst\u00e8mes de culture.<\/li><li>Que deviennent les coproduits actuellement valoris\u00e9s par l\u2019\u00e9levage (9 tonnes de MS \/an soit 3\/4 des coproduits)\u00a0? Toutefois, il ne suffit pas qu\u2019ils soient pr\u00e9sents, <strong>il faut \u00e9galement qu\u2019ils soient biodisponibles.<\/strong> Cette biodisponibilit\u00e9 s\u2019\u00e9value par la digestibilit\u00e9 qui atteint 95% pour le lait. Il n\u2019y a d\u2019ailleurs <strong>pas de perte de digestibilit\u00e9 des prot\u00e9ines due \u00e0 la transformation agroalimentaire pour le lait<\/strong>.<\/p>\n\n\n\n<p>Afin d\u2019\u00e9valuer la qualit\u00e9 nutritionnelle des produits vis-\u00e0-vis des acides amin\u00e9s, un score a donc \u00e9t\u00e9 mis en place par la FAO. Il s&rsquo;agit du<strong> score des AA indispensables Digestibles (DIAAS)<\/strong>. Ces peptides jouent un r\u00f4le important dans l\u2019absorption min\u00e9rale et la s\u00e9cr\u00e9tion d\u2019hormones digestives, l\u2019immunomodulation (anti microbien, anti tumorale) ou encore dans la densit\u00e9 osseuse (davantage que le calcium).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Conclusion<\/h2>\n\n\n\n<p>Les <strong>derni\u00e8res m\u00e9ta-analyses, sur la relation entre consommation de produits laitiers et sant\u00e9, n\u2019ont d\u00e9montr\u00e9 aucun effet d\u00e9l\u00e9t\u00e8re de la consommation de produits laitiers sur la sant\u00e9<\/strong>. Ce n&rsquo;est toutefois pas le cas pour la viande. La consommation de produits laitiers aurait aussi des effets b\u00e9n\u00e9fiques pour : le diab\u00e8te de type 2, la pr\u00e9vention du cancer colorectal et la sant\u00e9 osseuse.<\/p>\n\n\n\n<p>Le d\u00e9bat ne doit pas \u00eatre que sur la qualit\u00e9 des prot\u00e9ines. Les<strong> prot\u00e9ines laiti\u00e8res sont donc des prot\u00e9ines avec une qualit\u00e9 nutritionnelle \u00e9lev\u00e9e.<\/strong> Elles sont aussi<strong> une source potentielle de bioactifs, de vitamines et d\u2019\u00e9l\u00e9ments min\u00e9raux<\/strong>. Quand on veut r\u00e9duire la part de prot\u00e9ines animales dans son alimentation, il faut donc trouver un \u00e9quilibre pour se couvrir en acides amin\u00e9s. Si on augmente la part de v\u00e9g\u00e9tal, il faudra donc augmenter l\u2019apport total (manger plus de prot\u00e9ines v\u00e9g\u00e9tales) pour avoir la m\u00eame quantit\u00e9 d\u2019acides amin\u00e9s. Des \u00e9tudes ont toutefois montr\u00e9 qu\u2019on pouvait descendre jusqu\u2019au ratio 45 % de prot\u00e9ines animales \/ 55 % de prot\u00e9ines v\u00e9g\u00e9tales, chez un homme adulte. Mais pour certaines populations, il faut maintenir au minimum 50 % de prot\u00e9ines animales.
