Elles sont produites par des moisissures appartenant notamment aux genres Aspergillus, Penicillium et Fusarium. Ces toxines sont les contaminants naturels les plus pr\u00e9sents dans notre alimentation. Elles se retrouvent dans de nombreuses denr\u00e9es d&rsquo;origine v\u00e9g\u00e9tale. En particulier dans les c\u00e9r\u00e9ales mais aussi les fruits, les noix, les amandes, les grains, les fourrages, ainsi que dans les aliments compos\u00e9s et manufactur\u00e9s issus de ces fili\u00e8res.&nbsp;<\/p>\n\n\n\n<p class=\"has-text-align-justify\">Le climat et son impact sur la temp\u00e9rature, l\u2019hygrom\u00e9trie et la pluviom\u00e9trie, notamment pendant les cycles de culture, repr\u00e9sentent le facteur agro\u00e9cosyst\u00e9mique le plus important pour expliquer le risque de colonisation de la plante et la production de toxines. Il existe en parall\u00e8le, des facteurs agronomiques susceptibles de modifier, d\u2019att\u00e9nuer ou d\u2019amplifier l\u2019effet d\u2019un changement de climat. <strong>La capacit\u00e9 des moisissures mycotoxinog\u00e8nes \u00e0 r\u00e9pondre au changement climatique peut induire une modification de leur distribution g\u00e9ographique, du sch\u00e9ma d&rsquo;apparition des mycotoxines et des m\u00e9langes pr\u00e9sents<\/strong>. Ces changements peuvent avoir des cons\u00e9quences significatives sur la sant\u00e9 humaine et animale qu\u2019il est important de mieux comprendre. Enfin, ce changement climatique interagit avec l\u2019\u00e9volution des pratiques culturales n\u00e9cessaires pour s\u2019adapter aux contraintes r\u00e9glementaires, climatiques et sanitaires.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Changement climatique et mycotoxines : caract\u00e9ristiques et risques mycotoxines<\/strong><\/h2>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Caract\u00e9ristiques des mycotoxines<\/strong><\/h3>\n\n\n\n<p class=\"has-text-align-justify\"><strong>Les mycotoxines sont des m\u00e9tabolites secondaires s\u00e9cr\u00e9t\u00e9s par des champignons<\/strong>. Ces champignons appartiennent principalement aux genres <em>Aspergillus<\/em>, <em>Penicillium <\/em>et <em>Fusarium<\/em>. La pr\u00e9sence de mycotoxines dans les aliments destin\u00e9s \u00e0 la consommation humaine ou animale est potentiellement dangereuse. Par ailleurs, le champignon peut \u00eatre pr\u00e9sent sans produire de mycotoxine. Et le champignon peut dispara\u00eetre mais la mycotoxine reste.&nbsp; Par ailleurs, la production de mycotoxines ne se fait que sous certaines conditions de temp\u00e9rature et d\u2019humidit\u00e9.&nbsp;<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Evaluation du risque mycotoxine<\/strong>s<\/h3>\n\n\n\n<p class=\"has-text-align-justify\">Le risque est la probabilit\u00e9 d\u2019\u00eatre expos\u00e9 au danger. Pour caract\u00e9riser le danger, on \u00e9tablit la dose journali\u00e8re tol\u00e9rable (DJT).&nbsp;<strong>Quand la mycotoxine est consid\u00e9r\u00e9e comme canc\u00e9rig\u00e8ne, on parle de marge d&rsquo;exposition (MOE).<\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full\"><img data-recalc-dims=\"1\" decoding=\"async\" width=\"602\" height=\"341\" src=\"https:\/\/i0.wp.com\/normandiemaine.cerfrance.fr\/arad2\/wp-content\/uploads\/sites\/3\/2024\/04\/risque-mycotoxines.png?resize=602%2C341&#038;ssl=1\" alt=\"\" class=\"wp-image-3466\" srcset=\"https:\/\/i0.wp.com\/normandiemaine.cerfrance.fr\/arad2\/wp-content\/uploads\/sites\/3\/2024\/04\/risque-mycotoxines.png?w=602&amp;ssl=1 602w, https:\/\/i0.wp.com\/normandiemaine.cerfrance.fr\/arad2\/wp-content\/uploads\/sites\/3\/2024\/04\/risque-mycotoxines.png?resize=300%2C170&amp;ssl=1 300w\" sizes=\"(max-width: 602px) 100vw, 602px\" \/><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Changement climatique et mycotoxines : situation actuelle et \u00e9volutions pr\u00e9visibles<\/strong><\/h2>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Un risque mycotoxine dans la majorit\u00e9 des cas li\u00e9 aux conditions climatiques<\/h3>\n\n\n\n<p class=\"has-text-align-justify\">Le climat &#8211; temp\u00e9rature, eau disponible, lumi\u00e8re et fluctuations des cycles humides\/secs &#8211; repr\u00e9sente le facteur agro\u00e9cosyst\u00e9mique le plus important qui influence les \u00e9tapes du cycle de vie des champignons, leur capacit\u00e9 \u00e0 coloniser les cultures, et la production de mycotoxines. D&rsquo;apr\u00e8s des travaux d&rsquo;Arvalis, les risques DON pour le bl\u00e9 et DON pour ma\u00efs sont li\u00e9s respectivement \u00e0 55 % et \u00e0 85 % au climat. Pour les fumonisines, c&rsquo;est de l&rsquo;ordre de 74 % et pour les aflatoxines, de l&rsquo;ordre de 68 %. A l&rsquo;inverse, pour l&rsquo;ergot du bl\u00e9, le climat joue un r\u00f4le minoritaire (1%). En effet, le probl\u00e8me de l&rsquo;ergot est d&rsquo;abord une question d&rsquo;agronomie (qualit\u00e9 des semences et la gestion des adventices).<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Un impact du climat des 20 derni\u00e8res ann\u00e9es variable selon les mycotoxines<\/h3>\n\n\n\n<p class=\"has-text-align-justify\">En France, <strong>la temp\u00e9rature moyenne rencontr\u00e9e sur l\u2019ensemble du cycle du ma\u00efs a un impact significatif sur l\u2019augmentation du d\u00e9nombrement d\u2019Aspergillus Flavi retrouv\u00e9 dans les grains<\/strong>. Des travaux r\u00e9cents conduits par ARVALIS et non publi\u00e9s d\u00e9montrent une augmentation du risque fumonisine sur ma\u00efs. A l\u2019inverse, les pr\u00e9visions m\u00e9t\u00e9orologiques bas\u00e9es sur les sc\u00e9narios du GIEC corroborent les observations enregistr\u00e9es ces 20 derni\u00e8res ann\u00e9es quant \u00e0 une limitation possible du risque d\u00e9oxynival\u00e9nol sur ma\u00efs comme sur bl\u00e9.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Des changements de r\u00e9partition g\u00e9ographique des mycotoxines li\u00e9es au changement climatique<\/h3>\n\n\n\n<p class=\"has-text-align-justify\">Dans l\u2019hypoth\u00e8se de poursuite du r\u00e9chauffement climatique selon le sc\u00e9nario RCP4.5 ou RCP8.5, l\u2019augmentation des temp\u00e9ratures \u00e0 venir, entra\u00eenera une augmentation des risques aflatoxines et fumonisines sur ma\u00efs. Et une <strong>diminution du risque d\u00e9oxynivalenol sur bl\u00e9 et ma\u00efs avec des variabilit\u00e9s annuelles et territoriales<\/strong>. Toutefois, dans ce contexte de changement climatique, la variabilit\u00e9 naturelle du climat perdure. Cela peut annuellement sur certains territoires permettre une installation significative d\u2019un ou plusieurs de ces pathog\u00e8nes en culture, induisant la pr\u00e9sence des mycotoxines associ\u00e9es.&nbsp;<\/p>\n\n\n\n<p class=\"has-text-align-justify\"><\/p>\n\n\n\n<div class=\"wp-block-media-text has-media-on-the-right is-stacked-on-mobile\"><div class=\"wp-block-media-text__content\">\n<p>La capacit\u00e9 des moisissures mycotoxinog\u00e8nes \u00e0 r\u00e9pondre au changement climatique peut induire une modification de leur distribution g\u00e9ographique. Ainsi, l\u2019Europe a longtemps \u00e9t\u00e9 consid\u00e9r\u00e9e comme indemne d\u2019aflatoxine notamment en raison de son climat temp\u00e9r\u00e9. <strong>La gestion du risque reposait sur l\u2019application de contr\u00f4les stricts des produits import\u00e9s en provenance des zones \u00e0 risque<\/strong>. Cependant, depuis quelques ann\u00e9es, des alertes signalent la contamination de productions par les aflatoxines en Roumanie, Italie, Espagne, Portugal, Gr\u00e8ce\u2026<\/p>\n<\/div><figure class=\"wp-block-media-text__media\"><img data-recalc-dims=\"1\" decoding=\"async\" width=\"598\" height=\"288\" src=\"https:\/\/i0.wp.com\/normandiemaine.cerfrance.fr\/arad2\/wp-content\/uploads\/sites\/3\/2024\/04\/Extension-zone-risque-aflatoxine.png?resize=598%2C288&#038;ssl=1\" alt=\"\" class=\"wp-image-3467 size-full\" srcset=\"https:\/\/i0.wp.com\/normandiemaine.cerfrance.fr\/arad2\/wp-content\/uploads\/sites\/3\/2024\/04\/Extension-zone-risque-aflatoxine.png?w=598&amp;ssl=1 598w, https:\/\/i0.wp.com\/normandiemaine.cerfrance.fr\/arad2\/wp-content\/uploads\/sites\/3\/2024\/04\/Extension-zone-risque-aflatoxine.png?resize=300%2C144&amp;ssl=1 300w\" sizes=\"(max-width: 598px) 100vw, 598px\" \/><\/figure><\/div>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Changement climatique, mycotoxines et changement de pratiques<\/strong><\/h2>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Facteurs agronomiques augmentant le risque mycotoxines<\/h3>\n\n\n\n<p>Les principaux facteurs agronomiques qui augmentent le risque mycotoxines sont :&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>La rotation des cultures.<\/strong> La succession ma\u00efs\/ bl\u00e9 est un facteur de risque pour le d\u00e9oxynivalenol. La succession culture d\u2019hiver\/bl\u00e9 et autres c\u00e9r\u00e9ales \u00e0 paille est un facteur de risque pour les alcalo\u00efdes de l\u2019ergot.&nbsp;<\/li>\n\n\n\n<li><strong>Les dates de semis et de r\u00e9colte<\/strong>. En effet, le risque pour les fumonisines, deoxynivalenol et les aflatoxines sur ma\u00efs est amplifi\u00e9e avec des dates retard\u00e9es.&nbsp;<\/li>\n\n\n\n<li><strong>Les densit\u00e9s de semis.<\/strong> En effet, si elles sont trop \u00e9lev\u00e9es par rapport \u00e0 l\u2019eau disponible, le risque pour les fumonisines et les aflatoxines sur ma\u00efs est augment\u00e9.<\/li>\n\n\n\n<li><strong>Le non travail du sol <\/strong>et principalement l\u2019absence de labour, facteur de risque pour le d\u00e9oxynivalenol sur ma\u00efs et sur bl\u00e9 et les alcalo\u00efdes de l\u2019ergot sur bl\u00e9 et autres c\u00e9r\u00e9ales \u00e0 paille.&nbsp;<\/li>\n\n\n\n<li><strong>L\u2019absence de gestion de certains insectes ravageurs<\/strong>, facteur de risque pour les fumonisines, le d\u00e9oxynivalenol, les aflatoxines sur ma\u00efs et parfois les alcalo\u00efdes de l\u2019ergot sur bl\u00e9.&nbsp;Sur ma\u00efs, les s\u00e9samies et les pyrales causent des dommages sur \u00e9pi qui augmentent le risque mycotoxines. Du fait du climat plus chaud en \u00e9t\u00e9, on observe une progression de la s\u00e9samie vers le nord. On observe \u00e9galement une 2\u00e8me g\u00e9n\u00e9ration de pyrale plus fr\u00e9quente au nord de la Loire<\/li>\n\n\n\n<li><strong>Une moindre gestion suffisante des gramin\u00e9es adventices<\/strong>, facteur de risque pour les alcalo\u00efdes de l\u2019ergot sur bl\u00e9 et autres c\u00e9r\u00e9ales \u00e0 paille.&nbsp;Cela s\u2019explique par une forte r\u00e9gression de l\u2019efficacit\u00e9 des principales substances actives herbicides et par l\u2019apparition de populations de RG et de vulpin r\u00e9sistantes.&nbsp;<\/li>\n\n\n\n<li><strong>Une fertilisation d\u00e9s\u00e9quilibr\u00e9e<\/strong> et surtout le non recours \u00e0 l&rsquo;irrigation sous condition de stress hydrique, facteurs de risque pour les fumonisines et les aflatoxines sur ma\u00efs.&nbsp;Ainsi, dans les sols \u00e0 faible r\u00e9serve en eau et dans les r\u00e9gions \u00e0 la pluviom\u00e9trie incertaine en p\u00e9riode estivale et sans irrigation, on observe une remise en cause de la diversification des cultures avec une tendance \u00e0 implanter davantage de culture d\u2019hiver avec un risque d\u2019ergot du seigle major\u00e9.&nbsp;<\/li>\n\n\n\n<li><strong>Le choix de g\u00e9n\u00e9tiques <\/strong>les plus sensibles \u00e0 ces champignons toxinog\u00e8nes, facteur de risque g\u00e9n\u00e9rique.\u00a0<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Des \u00e9volutions de pratiques impactant d&rsquo;ors et d\u00e9j\u00e0 le risque mycotoxines<\/h3>\n\n\n\n<p class=\"has-text-align-justify\">Ces pratiques subissent d\u00e9j\u00e0 des modifications permanentes. C&rsquo;est notamment le cas du labour qui a fortement r\u00e9gress\u00e9 depuis le d\u00e9but des ann\u00e9es 2000 sur cultures d\u2019hiver. Avec comme objectif de pr\u00e9server les sols et \u00e9conomiser du carburant. Il existe aussi les vari\u00e9t\u00e9s de bl\u00e9 et de ma\u00efs actuellement cultiv\u00e9es, s\u00e9lectionn\u00e9es moins sensibles aux fusarioses.&nbsp;<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" width=\"603\" height=\"307\" src=\"https:\/\/i0.wp.com\/normandiemaine.cerfrance.fr\/arad2\/wp-content\/uploads\/sites\/3\/2024\/04\/part-des-cultures-sans-labour.png?resize=603%2C307&#038;ssl=1\" alt=\"\" class=\"wp-image-3471\" srcset=\"https:\/\/i0.wp.com\/normandiemaine.cerfrance.fr\/arad2\/wp-content\/uploads\/sites\/3\/2024\/04\/part-des-cultures-sans-labour.png?w=603&amp;ssl=1 603w, https:\/\/i0.wp.com\/normandiemaine.cerfrance.fr\/arad2\/wp-content\/uploads\/sites\/3\/2024\/04\/part-des-cultures-sans-labour.png?resize=300%2C153&amp;ssl=1 300w\" sizes=\"(max-width: 603px) 100vw, 603px\" \/><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<p class=\"has-text-align-justify\">La gestion directe de ces champignons avec un fongicide reste peu performante. Il faut donc faire appel en priorit\u00e9 au choix judicieux de ces pratiques pour limiter l\u2019impact du changement climatique lorsqu\u2019il est d\u00e9favorable ou accentuer son effet dans le cas contraire. Dans tous les cas, l&rsquo;objectif est bien d\u2019assurer le respect des seuils impos\u00e9s pour l\u2019ensemble de ces contaminants.
